Heather

About the Heather

Calluna vulgaris covers vast moors and heaths in Scotland, northern England, and northern Europe. Moorland is often burned in rotation to encourage young growth for grouse. Heather honey has a strong flavor and a jelly like texture. White heather is considered lucky in Scottish tradition. It was once used for thatching, bedding, and brooms. It thrives in acidic, poor soils.
